DIY: Low carb strawberry cheesecake

Ingredients

1.5 cup Ground granola

5 tbsp melted butter

12oz cream cheese, room temperature

1 cup sour cream

4 eggs room temperature

1 pack sugar free strawberry gelatin

½ cup powdered erythritol (can be found on Amazon.com)

1/4 cup heavy whipping cream

1/4 cup hot water








Instructions

Preheat oven to 375 degrees F.

Mix together ground granola and melted butter until it forms a light, crumbly mixture.

Equally spread out the mixture into the bottom of pan.

Bake this mixture for 10 minutes.

Mix the heavy whipping cream, hot water and gelatin together

Whip the room temperature cream cheese, sour cream, eggs, heavy whipping cream and gelatin mix and powdered erythritol. You want to whip it until the mixture is smooth and silky.

Add mix over granola base in pan.


* IMPORTANT STEP*

Put the cheesecake in the oven and IMMEDIATELY turn the temperature down to 225 degrees F.

After roughly 60 minutes, it will be finished!

It should be relatively spongy on top.

Also, after it is removed from the oven, cool on the counter then put in the refrigerator for at least an hour before serving!
