When I was growing up, my mom owned a bakery. She baked some of THE MOST delicious breads, cookies and cakes I have ever tasted and til this day, I don't think I have tasted anything that's as good as her baked goods. My mom did try to teach me how to bake. However, I think I inherited her cookie genes as opposed to her baking genes.
I started on my low carb journey in April 2017 and I haven't looked back since. More on that in a future post.
I wanted to share this QUICK and EASY recipe I just tried out (with a few tweaks). The best part is that most of the ingredients, you likely have at home. Enjoy!
Ingredients:
2 cups almond flour
1/2 cup confectioners erythritol
1/2 tsp baking powder
1 large egg
1 stick melted butter or 6 tablespoons melted butter for a less buttery flavor
1 tsp vanilla extract
1/2 cup sugar free chocolate chips (optional)
Instructions:
Pre-heat oven to 300 degrees F.
Mix all ingredients together until well combined.
Put parchment paper on baking sheet.
Use scoop to form 18 cookies on the sheet
Use bottom of spoon to flatten each cookie.
Bake for 12-14 minutes.
Allow to cool completely and enjoy!
